Kitchen philosophy
For illustration purposes, here is a more detailed description of our cuisine: It’s fresh - no gourmet - but very good and definitely homemade. The emphasis of the menu lies on Swiss and regional products and on personally known suppliers and producers - Less is more. Our idea is to have regularly changing starters, wonderful classics, and seasonal offerings such as game or stews. The classics, such as the Wiener Schnitzel or Pasteli, should be "Swiss favorites".
Chef Marc Hellstern and his team also let themselves get inspired by the Hardwald and cultivate their own herb garden. Of course you will also find products from our own farms. Dairy products come from our "Milchhüsli beider Basel", bread and many sweets from the Beschle confectionery and bakery, for example.
